As already stated milk varies. seal milk is incredibly rich and whale milk has the consistency of toothpaste (after all baby whales lack lips to use so the momma squirts this toothpaste like milk into the baby's mouth so it can swallow it.
Horse and goats are already milked as are yak in some countries and camel. However for large scale production nothing beats the dairy cow. Few animals can give the 2 or more gallons of milk per day on the amount of feed the cow eats. Horses have much less milk and eat a LOT more!
Goats are fairly efficient and produce a lot of milk for their size (their feed to milk quotient may actually be higher than dairy cows). However, milking is VERY labor intensive. It becomes more intensive as the number of animals increases. Thus more labor is spent getting a gallon of goat milk than a gallon of cow milk.

No other animal can compare with the noble cow.
In some cultures they are venerated as a species. They have saved many families from hunger and they only need grass to eat and water to drink.
I have seen goat milk occasionally in the grocery stores, and soy milk from soya beans of course. Soya milk can be mass produced, and actually already are seen as such everywhere.

I can only think of goats, as far as the species, I'm not one-hundred percent sure but there should not be a taste difference, but perhaps a different composition of minerals and vitamins
