I think a forensic pathologist would be pretty neat to do if I become a doctor, but I love history. I want to major in history education with a double minor in french and anthropology. I want to be a teacher, but I've always felt like I've wanted to be a doctor as well. Is it possible that I can apply to medical school after I've been out of college for a while and base my decision to study forensic pathology from studing anthropology and the human body?

you can do anything as an undergrad and be out of school for a few years as long as you complete the prerequisites and get the desired score on the MCATs the med schools you want to apply to, sometimes they look more favourably on students who have done things other than biology and chemistry majors

It is possible, but you would probably have to take a set of science courses to prepare you for the MCAT and medical school admissions. Look at the admissions page on the website of some medical schools to see what they require. There isn't much overlap in coursework with the things you are currently planning, so you might want to take some classes after graduating to prepare yourself for that possibility.
