Cause a sheet is not very effective and a wall is and a sheet is no harder then an egg so it will do nothing and a wall is harder so it will break the egg

Use Newtons F=ma to understand this.
The deceleration into the sheet is much less than the deceleration into the wall thus the force on the eggshell is less.
Why? Because the sheet deforms as the egg hits it, spreading the deceleration over a greater distance, creating an elastic collision, while the wall does not.

i would think its has the same concept of catching a water balloon...if its moving and stops abruptly and hits a solid surface then the egg will break but sense the sheet can absorb the impact it softens the blow...im not sure tho if you meant like a bed sheet or a sheet of paper

The wall provides resistance, the sheet provides a safety net. If you throw a hard-boiled egg against a wall it will break.
