Neither is correct. The yolk of an egg is YELLOW; the albumen is white.

If the object is singular, then the verb is plural.
If the object is plural, then the verb is singular. Therefore, "The yolk if a egg *is* white. But it's actually yellow. lol

If you're talking about one egg, it's "is" if it's two or more eggs it's "are."
