I found on a website somewhere that if you want thick stripes for a scarf you have to cut the ends and start a new color.....but my question is, Do you bind each one off and then sew them together or do you cut it off while keeping it on the needle and just continue to knit, but with a new color?

someone help.

and if you know of any good knitting sites for beginners with patterns and such, it would be appreciated!!

No, you don't want to bind off until your scarf is the desired length. As other writers have indicated, you just want to leave a tail long enough to weave in from both your last yarn and your new yarn. Try not to tie them if you can avoid it.
There is another method of making stripes you might enjoy. If you cast on the length of your scarf, instead of the width, say 100 or 120 stitches. Knit 4 or 5 rows in each of several colors until scarf is desired width.

There's no need to bind off. Leave the stitches on the needle, and cut your working yarn, leaving a tail at lease 6 inches long. Start the next row with the new yarn.

Knit the whole thing in knit stitch for starters. Always start your new colour on the same side so the joins are all on the same side - when you join in a new colour, leave a tail of the old yarn about 6 inches so you can sew this into the back of the stitches later.

you work the number of row that you want, then at the end of the row cut the yarn leaving about a 5 inch tail to weave in later. put up your new color and then just start knitting with that color.

just so you know you can tie the 2 tail together so that the first stitch isnt too loose which is normal.
