I hate to admit that you are not going to see Texas at it's Best in Lubbock. I was sentenced there for a short time while at Texas Tech for a summer(but managed to escape to Alabama for the rest of Uni as there is no place for a sculler in west Texas). The town itself doesn't offer a lot and the arid plains of west Texas do not produce much but skinny cows, oil and dust. If you can visit one of Texas' major cities.
1. Houston - largest city in Texas 3-4th in US depending on current estimates, a lot of entertainment areas, NASA, and the Kemah area all are great.
2. San Antonio - 2nd largest city in Texas 6th in US, has Sea World, 6 Flags Fiesta Texas, The Riverwalk, The missions including the Mission San Antonio de Valero (aka Alamo), and home of the NBA Champion Spurs (which you will hear about constantly since there are no other professional sports in SATX)
3. Dallas - 3rd largest in Texas 8th in US Has a 6Flags and many other entertainmentparks, is in a combined Metroplex with Fort Worth the 4th Largest City in Texas, they have grown together, The museums in Fort Worth are great. There is a lot to do in the metroplex area.
4. Austin - 5th Largest city and Capitol of Texas. This and San Antonio are the truely best parts of Texas. The two cities are very different in culture and every other way but together provide a wonderful area.
In between San Antonio and Austin is an area which is called the SanAntonio Austin entertainment corridor. Lots of quaint little cities and towns (most of them of German origin), the hill country, several lakes, and rivers, The best part of the Texas wine tour is in the hill country and a wine tasting tour can be a nice way to spend a weekend in the country. And Texas' best entertainment by far is tubing. This is common on the rivers between Austin and San Antonio, around a town called New Braunfels, it involves sitting in a car inner tube and floating down a lazy river with some food and drinks and just enjoying the environment. (sort of a poor man's punting but you get wet)
As far as west Texas hope you enjoy it. If you are with friends anyplace is nice

What happened Hell was all booked for those three weeks ? I don't know where you're flying into -probably DFW -but the first rule of west Texas is that everything is far away from everything else. Far in the American sense of the word not the European sense.
Rent a big comfortable car w/ at least a V-6 in it .Better yet rent a Mercury Grand Marquis from Hertz w/ the 4.6 L V-8
28mpg at highway speeds & a really comfortable vehicle to spend all day in
Theres a really neat loop drive that will take you north to Amarillo ,west to Santa Rosa via one of my favorite old Rt 66 towns of Tucumcari NM and then back to Lubbock via Ft Sumner & Clovis NM . The routing just mixes The Grapes of Wrath culture w/ the cowboys & Indians culture and w/ a little bit of the Conquitador thrown in
