rc1 = Release Candidate 1, etc. which means it's probably still in "Beta".

The higher the number, the more recent the release, so RC3 is the best choice for you.

RC stands for 'release candidate'. It is a way of saying that the piece of software has been in development for a while and therefore has had a lot of the problems which would be present during its early stages ironed out and is almost ready to be released. It is usually the stage of the development cycle before wide release.

Other stages in software's development are Alpha and Beta, Alpha being the very first few builds where all the features might not yet be implemented and there will probably be a lot of bugs. Beta is the stage after Alpha, Beta software often has the majority of major features implemented and usually wouldn't have totally show-stopping bugs still in it.
