Any material that is mostly liquid like your body will boil away and evaporate in the vacuum of space.
The pressure inside your body provided by your hart explodes the blood vessels in the vacuum where there is nothing pushing back and the blood flows out. Seal off the finger or hand and get back inside where there is pressure. Your hand can survive without blood for a short while.
