Have you ever tried to peel cheddar? It doesn't work.

Protein chains... string cheese is made from milk curds which are essentially all protein.

Protein can be visualized as a clump of string or rubber bands. As you heat the cheese, the cheese proteins starts to uncoil and become elastic. String cheese is made by stretching the cheese which aligns the protein chains in long strands.

Is it fiborous?
It's not fibrous due to cellulose or vegetable fiber, but it is fibrous due to the protein strands. I'm assuming you're meaning for Fibrous is something resembling filaments or strands.

Either that or real string! =)

Mozarello when cooked is a stringy cheese so mix with cheddar and basically you have it.
