there have been so many books published recently in the field of cosmology and quantum science etc., but none that I know of in the chaos field.

Mostly because Chaos Theory never really panned out as a viable science. It does a good job of explaining why we have problems making certain kinds of predictions using other methods, but it doesn't really show how to make any usable predictions itself.

Researchers, and those who fund them, like to get some value from the resources they are investing. Lack of testable predictions kind of gets in the way of that.
