I would assume that they don't technically own any of them; the Hilton corporation is likely the "owner" of all the properties. Usually a corporation is formed to protect the actual business owner from liabilities. In other words, if you fall at one of their hotels you can sue the Hilton corporation but not one of the Hilton's themselves. This helps protect their personal assets since, for legal purposes such as a lawsuit, a corporation is considered a person.
Anyway, I believe the Hilton corporation owns a number of different hotel chains along with the iconic Hilton hotels so the number world wide has to be in the thousands as far as individual properties. I'm sure a Google search would give a good estimate.
