I know that granite is native to central texas but am wondering what other stone is native to the area.

Cretaceous shale and Iimestone outcrops--all of Central Texas use to be under a vast inland sea. It's very Texas chic nowadays to build homes of "Austin [lime]stone"; what's more, most houses in Central Texas don't have basements simply because it's too difficult and expensive to dig a deep enough foundation--hence the concrete slabs.
