Hi Comet. It's me and I'm from the South. So we never used Sour cream. HOWEVER, when I moved North to go to school, boy did I get a surprise. South cream was used for everything!! LOL Here's what I was taught at one of the best deli's in NYC.
Shred a head of small cabbage. Get rid of outside leaves.
Use 1/2 cup sour cream, more if needed after it sits.
3 Tabs of red vinager
1 Tabs. of sugar Let sit. Mix. Taste again. Adjust to taste. Add salt and white pepper if you want too. The deli's in NYC make a fortune on this. Hope this helped M

Maman used Miracle Whip, about a cup of miracle whip, enough vinegar to make it runny, and then sugar to taste. Not too runny, though, lol... Kinda had to do it by guess every time.
