Is it possible to differentiate their DNA species type if all their blood is mixed together? (e.g. mix human's, chimp's, bird's, tiger's etc blood together. If yes, how?

Yes. If multiple types of blood are present, multiple DNA profiles will be generated.

YES, otherwise how would the victim be separated from
the criminal's. DNA's very purpose is to tell who you are
race. etc and origins.
