Not at all like oysters. I love oysters. I don't like sea urchin at all.
Most sushi restaurants have sea urchin (called 'uni'). There is actually not much meat in the sea urchin ... what you are eating is mostly the roe (eggs).
I really like most sushi ... including most kinds of roe ... but I have never developed a taste for uni.
One thing I know from uni lovers ... it really does have to be fresh. It gets awful really fast. But even at that, I've been with sushi experts who had the good stuff ... but it just didn't grab me ... not gross or anything, not something I would choose again from the menu.
And I'm sorry I'm not being very helpful describing what it tastes like ... but I don't know anything to compare it to.

Granted, I've found that some things improve if you don't eat them really fresh, but the urchin from Hakodate tasted like concentrated salt. I don't want to try any again.

ive had sea urchin roe (uni, pronounsed ooni, in eastern) uncooked and clean from the sea urchin taken from the sea besides as on sushi. whilst its liteally from the sea you could flavor the 'oceany' flavor in the prosperous and candy flavor of the uni. on sushi its the comparable merely not as reliable of a flavor, extra mellowed. counting on if it replaced into frozen the flavor isn't surprisingly much as good as clean from the sea. i could say specific, its comfortable, creamy and extremely prosperous in flavor. some say its an obtained flavor, not all like it. besides that's high priced. not some thing i could cook dinner yet thats merely me.if its on sushi merely dip it a touch in wasabi and shoyu.

sea urchin tastes intensely of the ocean. sea urchin is awesomely delicious. i think i will eat some sea urchin this weekend! thanks for the good idea!

The only part you really can eat is the roe (eggs). Some say it tastes like caviar. No surprise there. I tried caviar once. Once was enough!
