Crossfire is theoretically more elegant in how it divides the load between cards but in the real world, SLI wins most performance comparisons. The only real advantage to Crossfire is that you can combine different models of video cards, whereas for SLI the cards must be identical.
Go for SLI.

lot of users are saying sli is better however pound for pound the crossfire configuration is better
sli has lots going for it,its goona be the first to enable quad sli,as theres more sli enabled motherboards compared to corssfire boards
however of the few corssfire boards there is,they are very good,crossfire is great for hardcore gamers,i have used a gaming p.c with 2 x1900xtx cards in crossfire configuration and trust me when i say it blows your socks off
however if your new to dual graphic set ups then sli is your best bet,crossfire driver installtion is just too difficult for the novice,and sli is easier to set up
did you know? sli actually came out around 7 years ago when 3dfx designed a voodoo sli card,well infact there were 2 voodoo graphic cards made into one ,but they were called sli and worked quite well,each card had 32mb of memory which in that day was alot,64mb of video memory was unheard of
both sli and crossfire are excellent set ups ,hgowever if you want full throttle gaming then use crossfire,but dont dismiss sli,its a excellent set up

nvidia sli on nvidia-based motherboards are the best combo!
sli uses lesser power and gives greater performance on Windows vista.
Use sli on two nvidia 8600s and you have the ultimate rig!
but sli may sometimes slow the framerates like crossfire does.
Gigabyte chipsets released the GA-8N SLI Quad Royal.thats the power of 4 graphic cards on your pc!
but keep in mind, it gets hot after sometime, so you must have a good cooling system.

Ditch ATi, as their crossfire is highly inefficient.
Best SLI? It depends what you mean by that. If you want the fastest SLI, I'd say four GeForce 8800Ultras in quad SLI would be the fastest. No one can really afford that though.
Two GeForce 8800GTX's in SLI would be the best in my opinion.
I don't recommend the "8600" in SLI as those cards suck donkey. Two 8800GTS 640MB in SLI would be the lowest I'd go for an SLI config.
