If the cookware was made in China the definitely take it back. This sounds like a Chinese trick, adhering a thin layer of "stainless" onto a scrap metal base.
The Chinese concept of what constitutes "stainless steel" is also debatable.

It is good. The aluminium is there to conduct heat evenly and prevent hot spots on the bottom. It is not in contact with the food. Cooking with aluminum has not been shown to be harmfull. This idea was started because it was found that many, not all alzheimers patients had elevated aluminum in the brain. A better reason not to cook in aluminum, at least acidic foods is that it can affect the taste. Aluminum will also be stained by some high sulpher foods like eggs or asparagus. It does not matter which side of the aluminum foil you have toward or away from the food. The dull side is because it is rolled two shhets at a time. The sides toward each other are dull, the sides in contact with the steel rollers are shiny. It should not be in contact with acidic foods for the reasons above.

I only use cookware that is 100% stainless steel. I love mine. I have been told that Aluminum is not good for health issues, also if you use Aluminum foil, to put shinny side toward the food. The dull side is the side you don't want to touch it.

I have preferred cooking in copperware than stainless steel Serving food in copper cookware helps prevent the spread of disease.Copper cookware is one of the best heat conductors for all types of cooking. My cousin sent me a link for copperware a long time ago http://www.hotelcookware.com/

I have a set of Glass cookware that is over 30 years old. It does not discolor and is easy to clean. The label says "Corning France" This set is 3 different size pots w/ covers and a couple of sauce pans. Can be used in a Microwave or regular oven.

Stainless is very good cookware it will turn colors after using it but it will last for a very long time and cooks evenly.

The aluminium is probably only on the external base of the pans as it is a good heat conductor so it will do you no harm. Quite a lot of satainless steel cookware have aluminium bases. Dont worry.

People have been eating from aluminum for quite a long time with no side effects. So, unless you are in Calfirnia where everything seems to be cancer causing.. you'll be fine.

Take them back! Research proves cooking in aluminum deposits that aluminum in the brain matter. Don't use them again....
