If you want to be behind the wheel all day you can see several countries south of France, but if you want to relax and still see several different countries, take the ferry nearest your home to either the north of France, Belgium or the Netherlands.
Travel through Belgium, Luxembourg, Netherlands, Germany, and Denmark if you live in the north of England, and take a ferry back from the north of Germany, or after Germany go south, (Switzerland is possible,) and go back home through France.
I have done things like that traveling by train, but I prefer to have one day or more between traveling, so I have time to see the place.
I entered the plan London, Amsterdam, Brussels, Luxembourg, Achen, Copenhagen, London into a travel planner and got 3600 km.
For a travel on to the south, London, Amsterdam, Brussels, Luxembourg, Achen, Geneva, Paris, London I get 3100 km.
This will give you an indication on how far you travel per day, about 200 to 250 km in these examples, but if you add more countries the daily distances will increase, or you will need to do long travels each day instead of every second day or so.
And prepare for either loneliness or being alone, or for sharing your car with hitch hikers or people from the hostels needing/wanting a ride the direction you go. Whatever you feel most happy with.

I live in Canada. My husband and I flew to Lisbon, Portugal and rented a car and drove north to Porto, Nazarre, and then up into northern Spain. We continued on to la Coruna and then down to Santiago. I must say, we covered all of the major attractions in Spain, and went up into Andorra, and into France. We toured Tolousse, and Carcasonne, Narbonne and went back down to Barcelona and travelled onlong the Spanish coast to Gibralter. We also covered the Costa del Sol and then headed back to the Algarve in Portugal. We took 3 weeks to do this trip. We stayed in Novhotels and Ibis we also stayed in la Coruna with a Senora Maria. Her rate was 25 euros. You should drive and take the ferry over to France and head south east to Spain and tour around Spain. Wonderful sights to be sure!!!

i dont drive but if i were you, id start off taking the ferry to france!
the drive to italy from there is said to be a superb drive... for scenery... not for duration lol.
look at each country where you want to go, then see whats going on... i aint even gonna be boring and suggest amsterdam.
all it takes is careful planning.

go for it, i drove from calais - paris grenoble- gap - monte carlo- piza - bari-brindisi - athens - & back in two weeks
