How do you understand the speeds you should be when shifting each gear? Ideally whats speeds is recommended?

Does shifting to 5th gear at a speed of 50kmph and then racing cause any harm?

Similarly when down hifting, i am at 40kmph, which gear should i ideally be in?

All over, what would be the best speed to gear values i should be aware of ? have a 1600cc engine, 5M, 105ps machine here.

As you get used to driving you'll develop an idea of when to change gears. If someone who can already drive a manual is teaching you they can tell you when to change.

You shouldn't be going into 5th at 50 km/h, you want 3rd at that speed (or 2nd if you need to accelerate up a steep hill). Don't go into 5th below 70 km/h although shifting down into 4th at 60 should be fine.

At 40 km/h you should be in either 2nd or 3rd depending on how much power you need and if you're breaking you should get into 2nd.

Racing your car is really something you shouldn't be doing, especially if you don't know enough about how to drive that you ask a question such as this one.

The manual of your car might have some recommended speeds to shift at (or just a list of speeds you can use each gear for, you probably won't want to use the extremes of that list though) and a tachometer if you've got one will help you a lot (3000 rpm is good for power, 2000 rpm for economy and don't go below 1500 rpm).

for normal driving you want to be in the gear that wont lug or over rev somewhere in the middle of the power band is good now racing shift at red line good luck
