It is actually the definition of acceleration. Acceleration is the rate of change of velocity.

acceleration a = final velocity - initial velocity/time taken

Transposing u get the v = u + at, what more proof is required?

The actual equation for final velocity of a mass in motion is determined form the Energy equation and divide it by the mass and then take the Square root.

The formula for The energy is = E=mass x a^2 x t^2.
Where a =the instantaneous acceleration and t=the time value at that instant that the mass travels.
So the Final velocity of a moving mass can only be accurately determined from the Final value of the Energy of the moving mass.

V final = (u=0) + a x t where u is set to zero relative to the frame of reference where the velocity is measured from.

Hence velocity can only be measured if the frame of reference is set to Zero even though U is the velocity of the frame of reference.It is relative.

Acceleration is =defined as the distance a force travels divided by the period of oscillation square of the moving mass structure.

You mean v = u +at.

You don't prove it. It's the definition of acceleration.
