Well, if he's not moving or eating for a long time, then you can check: simply lift up his shell, and if his body falls out, or almost falls out, then it is dead. If not, then it is alive.

when my hermit died, he didnt move, and his claws were tucked into his shell, like he was hiding, for like a week. and if you poke his claws/legs he wont move at all

He will not move and falls out of his shell

They crumble. If you move them, their limbs will fall off.
