Jim is correct here. Turn the ignition key to the on position(w/o startin it) and depressthe accelerater panel all the way down to the floor three times w/i 5 seconds. Turn the key off and then back on and it should go off once you start the engine up.
As for the stereo have it professional installed. That way you won't accidently trip the Anti-Theif and poss. cuz even more problems for yourself.
I just had a Pioneer h/u professionally installed in my 04 Silverado and all the bells and whistles worked fine afterwards. But, the module to install it cost $98. bucks. In order to by-pass or accept the controls(anti-theif/delay off, til the door's opens, ect.) built into the truck from the factory.

Stop by your local chevy dealership service dept.Sence you removed the factory radio which you needed to reset the change oil light.The service dept can use a tec-2 scanner to make the light go out.
