I saw the pic of this guy carrying around his "pet" lobster. Lobsters come out of the ocean and must breathe with gills or something, right? So how can they breathe water AND air?

Many crustaceans like lobsters and crayfish can survive a long time just by keeping their gills wet. But as they start to dry and cling together the animal is getting less and less gas exchange (oxygen to its blood and CO2 out) and it will suffocate. What's interesting is that some crustaceans like land crabs in the tropics spend most of their lives roaming around on land because it is easy to keep your gills wet in such a humid climate! Also, of course, common land crustaceans like sow bugs are adept at doing the same thing. Obviously most crustaceans need to be in water to effectively ventilate their gills (including that fellow's slowly dying lobster...very cruel). They can't all be as specialized as land crabs or sow bugs.

Like crayfish, lobsters can breathe air as long as their gills stay wet. Once they dry out, they can no longer do this.

Lobsters don't have lungs or gills ,they absorb oxygen through their otter skin. They can survive just like crawfish in air, but they live in the sea.

They don't do both. When they are out of water they are dying for lack of oxygen. It just is not an immediate effect.
