A pick is pass interference by the offense that is done during a crossing route in man to man coverage.
First, keep in mind that the offense can commit pass interference at any time during the play as opposed to the defense who can only commit pass interference once the ball is in the air.
During a pick, two receivers, A80 and A89 are being guarded by B55 and B70, respectively. They run routes that cross. While all four players are trying to pass through the same spot, A80 intentionally runs into B70 (although he tries to make it look like an accident), thus freeing up A89 to catch a pass uncovered.

If you are talking about a pick, as in setting a pick in a basketball game, it is illegal in football.
You are correct when you say that it is done on crossing routes, where the two receivers routes cross each others path, however, for one receiver to intentionally pick off a defender is illegal. To run this legally, the receivers run their route, and hope the defenders get crossed up and run into each other, or one of the receivers.

On top of the pick that everbody else said, where you illegaly hit a guy on a cross pattern, a pick is also when you intercept the ball.

It is done all the time in football on short crossing routes by the WRs. It is illegal but it is rarely called.

and picks are illegal
-in your little cross play, the offensive players are by no means permitted to 'pick' the defense...they just have to hope the D runs into somebody
