This is my own recipe so it is copyrighted to 'Sunnyside Up' Recipes but you may make it and share it as long as you let others know where you got it from. Elongated potatoes like the baking potatoes work better than the round ones for this. Figure one potato per adult if it is medium to large sized.

"FRENCH BAKED POTATOES"

Heat oven to 400 degrees and use center rack.
12 x 18 jelly roll baking pan with 1 inch sides works best because it allows the heat to reach the sides of the potatoes and crisp them.

Wash potatoes and pat dry. Leave the skins on. Slice the potatoes into wedges lengthwise and place them into your favorite vegetable oil. Try different flavored oils to enhance the taste and give you some variety when you serve them each time. Coat them entirely. I put them all in a bowl and slosh them around with a spoon. Remove them a few at a time and let them drip only until the excess oil is off and place them wedge side up / skin side down on your pan spacing them about 1/4 inch apart. Sprinkle them with pepper, salt, garlic powder (if you use garlic salt, omit the salt) and parmesian cheese (the dried grated power kind). Bake 45 minurtes (more or less) depending on the thickness of your wedges, until the tips are a good golden brown and potato looks krispy around the edges. Remove from oven and serve hot.

For variations, try sprinkling the tops with cayenne or red pepper, onion powder, chili powder, chives, etc before baking.

Scalloped Potatoes are always a favorite in my house.
Simple - easy and DELICIOUS.
Peel and slice taters into 1/4" rounds. Grease a baking pan w/ butter. Put down a layer of potatoes. Top with onion slices, pats of butter and salt & pepper. Dust entire layer with flour. Repeat until pan is full (usually 3-4 layers does it.). Fill 3/4 full with milk or half & half. Bake at 350 until cooked. Adjust liquid and flour proportions to vary the thickness of the sauce it creates. You can't mess this one up - and even if you do - they'll still taste great!

Try looking at a Rachel Ray cook book! She has some great ideas and they are all very easy to do. One of my favorites is her smashed baked potatoes! It's basically mashed potatoes(she's calls them smashed because that's basically what you're doing) but instead of using milk and butter, try sour cream and butter......through in some fresh cut chives(or dried if you have them in the spice cabinet), a little salt and pepper! You have your baked potato smashed with your favorite toppings! She has different variations, so try looking on FoodNetwork.com for any more ideas!

Me too!! I like using mashed potatoes and loading it up with all the topings of a baked potato. Pretty much any time you add bacon, cheese, sour cream, and butter to potatoes you have a winner. Try shrimp, onions, bacon, and polish sausage!!

Find some German recipes for potatoes. We are in Europe now and, let me tell you, the Germans can cook a mean potato.
