I agree with you. Most companies are sensitive to this and only ask for race for purposes of demographics. They love to do surveys to find out what their market is. Most give you the option not to answer that question. I believe that it isn't legal to require you to answer that question on a job application. You are right though, when we all, no matter what race we are, consider ourselves Americans first will we be the great country that we believe we are.

I think that part of it has to do with the anti race and anti ethnic laws that were introduced in the 50's, 60's and 70's. Once you pass laws like this, you have to have some method of monitoring if anyone is breaking the laws.
So they ask for the race of a person, to comply with the laws. Somehow, your ancestor's nationality, ethnic and cultural group also seems to have been included.
Keep filling in those forms.

It does not only occur in America, all countries have to ask for race, age, gender etc. Its for stats, nothing more.

Well, in a related issue, there are Moroccan people in Holland who change their names on application letters into dutch names in order to increase their chances for an interview. Sad but true.
I think the answer to your question is that it is a practice from earlier times that nobody ever got around to changing. In London cab drivers are apparently legally obliged to carry fodder for horses in their cabs. Also something nobody ever got around to changing. (needless to say, none of them are fined for not having it with them)
