I work at a hospital that provides free wireless internet access to families and such. Does the hospital have any way of knowing what websites are visited and more importantly whos laptop was used to access them? Furthermore, will the hospital have access to any info on these users computer?

Yes, the hospital can know who is using there internet, yes they could get to your info on your computer, but even if you were using your own wireless internet anyone who wanted to could get on and into your computer, and that would be against the law, unless you signed something that allows you to use there internet. If you did then you might want to look at the small print. Most likely nobody will care what sites you are looking at, if they had some form of firewall(like they do at highschools that dont allow certain sites) then that should block sites they dont want you going to.

I would be careful, actually, you can track all the info if set up correctly.

Or conversely, you could also limit the sites visited very easily.

Somewhjat depends on the ssettings, and what software is installed. A good tracker could print you stat sheets on how long people stayed on shopping sites vs news sites by what time of day.
