It means, with a strongly offensive undertone, "I don't care".
The specific phrase was popularized in the early 90s, probably a variation on the much older usage "what's biting you"? meaning, what's bugging you? (See link below.)
So, "bite me" would have evolved from the idea "so bug me, see if i care". Sort of like "so sue me".

Exactly what these ladies are saying. My mother never likes it when I say "Bite me" to my sisters... So I'll say "Screw off!" instead. Haha; not much better, is it? Anyways it's basically a playful or rude joke that people use when they are annoyed at you. If a woman says it to you DON'T take it literally. You'll end up with a smack in the face instead of a date (=

When an animal is upset, it will bite. If u are upset at someone and they dont really care, they are challenging u to "bite them" and look like a crazy fool. It is an insult because u wont do it, and its another way of saying "fight me if u can, u chicken"
