Wow! Upon first glance your question appears quite simple (as most Technical/User issues usually do). However, even for someone who has been in IT for 20+ years, I have to admit that this was a rather intriguing and "not so simple" issue to resolve. I'm sure those who use these symbols on a regular basis probably could have solved it much faster than I.
None the less, I found it challenging and was able to figure it out for you. I am providing two of the easier methods for being able to do this. They are as follows:
METHOD ONE:
Copy the following, and then paste directly into your Word document (this is the easiest way):
Note: The above graphic will not show up in this posting, however, you can obtain the actual graphic/character to copy and paste from this website: http://en.wikipedia.org/wiki/Table_of_mathematical_symbols
METHOD TWO:
Press CTRL+F9 (this is a shortcut to inserting a field into your Word document), and then copy and paste the following (included below) into the braces that appear (between them). After doing this, click your mouse anywhere outside of the field and then click on "Print Preview" to view the result.

Please note, there will be a space on either side of the above when pasting it into the field, which the field automatically provides.
Finally, you can find “Combining Diacritical Marks” under Insert > Symbols > Subset within Word 2007. After completing the first one successfully, I suggest that you just keep copying and pasting it were needed. :-)

The simplest method is to use the Equation Editor on the Document Elements tab of the Ribbon. Once you click the Equation [Σ] button:
Click the Accent [ä] button
Scroll to & select the Overbar character
Left Arrow into the box under the bar
Type either an upper or lower case letter of your choice
Click outside the Equation field
If you'll need to use the overbar character frequently you can select it then use Edit> Paste Special - Picture. As a picture or as an EQ object it can be saved as a new equation (using the button on the right edge of the EQ control), added to the Scrapbook, saved as an AutoText Entry or as an AutoCorrect Item.

If you re looking for a way to not have to do so many mouse clicks and interrupt your typing, there are options to TYPE many math symbols and operators.
For example, “x\bar" will produce x̅, or “q\hat” will produce q̂. For Greek letters “\sigma” produces σ, while “\Sigma" produces Σ. (In all of these cases, do NOT type the quotes.)
Click on File > Options > Proofing > AutoCorrect Options > Math AutoCorrect
Check the box next to "Use Math AutoCorrect rules outside of math regions"
-- This allows you to use these math and symbol typing short-cuts outside of the equation tool (a little mini-window within your document for equations). <-- I m not sure what that window is called, but you can create a new one by clicking on "Insert > Equation".
Check the box next to "Replace as you type"
-- This initiates a special kind of AutoCorrect that replaces the text you are typing with symbols or diacritical marks.

Or, if you have an equation tool open, you can hover your cursor over the symbol and the name of the symbol and any available typing shortcuts (e.g. “Infinity (\infty)”) will appear.
