you can't tell unless you have the head off the engine and compare it to a stock head that hasn't been done.

You'll see evidence of metal being removed from the ports. You'll also notice that casting flaws and bumps are removed from the insides. I'm not sure, but I think the chambers are usually what's polished on the heads.

you don't unless you take the manifold off and look.
If you are buying a car that supposedly has a port and polish done, definitely ask for a receipt, and assume it is BS if you aren't shown are receipt. If you are getting the work done on your car, go to a shop where someone you know has gone before, and that you trust.

The intake and exhaust ports don't look like unfinished rough castings,they are machined and polished.

exhaust ports on the heads should feel smooth and shiney (polished). stock heads have rough exhaust ports

You will have to look at it. Pull the exhaust headers and take a look and see if it is smooth and slick. good luck.
