Pumpkins are ready to be harvested by late August, when the rinds have hardened. They become the proper shade of orange (somewhere between deep yellow and fiery red) or white (to pale yellow), for their variety. Check the number of days your variety needs to grow to maturity. You'll have to compare the color of your pumpkin with the color on a picture of your plant type. You can test its readiness by jabbing your fingernail against the outer skin, or rind. It should be strong enough to resist puncture. Also, some people say "a pumpkin is ripe if you hear a hollow sound when you thump it".

Cut pumpkins from their vines using a sharp pair of garden shears, leaving a three to four inch length of the stem attached, and let them cure in the sun for 10 days. Cover them at night if there is danger of frost. Then, store in a dry cool place.

If they are white pumpkins they are not ready, if they are big and really orange then they are ready.
