Yup, they do.
American Idol is an example -- it is considered a reality show, but they are affiliated with the union AFTRA, so contractualy they must be paid I am 99.9% positive.

Most of the time,but also they make a lots of money from the aftermath of their experience by doing magazine deals and presenting TV shows etc.

good question.
i think they should,
because theres usually ridiculous amounts of drama that go on
so i would want some ca$h for an inspiration to stay on the show
(i have "the real world: Sydney" in mind right now!)
