If I tunes tells you that you do not have the rights to do that (burn to a disc), then there is a program called Tunebite, which will allow you to covert from I-tunes to MP3 or any other format.

Go to Edit > Preferences > Advanced > Importing
Change the Import Using option to "MP3 Encoder"
Click OK and close preferences
Select the music you want to convert
Go to the advanced menu and select "Convert Selection to MP3"
Once it's done, you'll have 2 versions, the original AAC, and the new MP3. You can delete the old AAC, or you can just locate the MP3 file by right clicking on it and saying "Show in Windows Explorer"
Keep in mind, This will not convert DRM-protected purchases from the iTunes music store. The only way that I know of to remove the DRM from iTunes store purchases is to burn them to CD and then re-rip them back into iTunes.
