I would make some homemade (yes, homemade) fettuccine noodles. Then I would simply roast some fresh red and green peppers from my garden, make a homemade (yes, homemade) alfredo sauce for the pasta, toss everything together, pour a glass of wine and sit down to a lovely vegetarian meal. What time shall I expect you, 'bout 7?

split open an entire grain English Muffin, unfold with a small quantity of dijon or honey mustard, good with diced crimson/green pepper, broccoli & cauliflower and a few mozzarella cheese. Then toast interior the broiler or toaster oven until cheese melts. Yummy!

For dinner, a big tossed salad, pasta tossed with butter and grated Parmesan, and corn on the cob.

Do eggs count? I don't know if eggs count.

If 'No', then I could make a quick omelette (with some cheese, onions and assorted vegetables; maybe a little tomato, some peppers).

Wait ... does cheese count? I don't know if cheese counts.
