If you're into getting together ever so often with friends to play a game, Super smash bros melee is a must. Another game is Resident Evil 4, which has incredible gameplay as well as awesome graphics for a gamecube. It's rated M however, but it's gotten raving reviews.
If you're really into fps, the bond games for gamecube satisfy both singleplayer capabilities as well as an excellent multiplayer, however the best of the bunch is 007:Nightfire.
I would stay away from Mario Party games because most of them turn out to be a waste of money.
I havn't played Sonic Adventures [ionno the gamecube name, it's a 3 dimensional adventure game] on the cube but I've played it on the dreamcast and I personally enjoyed it very much, however the single player may become long and tedious.
These are all quite good but depends on your tastes: LOTR series, Call of Duty, Prince of Persia, Metroid Prime, Star Wars games [Stay away from the Clone wars one. It gets old fast], and of course, the zelda games.
