I am more interested in English or Creative writing, but I'm thinking one of these minors will open up more opportunities.

Although I think a good English major should have the communications skills to be employable, some people are skeptical of humanities graduates, so yes, minoring in something more "practical" may overcome some employers' concerns that you aren't down-to-earth enough to hire.
