Considering that the Sun emits significant X-Rays and Gamma Rays, most other stars should do that also. Is there a
way to make some kind of steerable X Ray Detector (and possibly Gamma Ray Detector ) like a satellite Dish?

Chandra space telescope and the Compton satellite are xray and gamma ray detectors respectively.
The earths atmosphere is a very efficient filter for this end of the spectrum or we would glow in the dark;-)
