King Richard of England ("Richard the Lion Heart") is a fascinating figure. He was an excellent military leader (both in the Crusades and the Hundred Years War), and he was visually striking--well over six feet tall (during a time when most men were no taller than 5 feet 6 inches), with long red hair. Do a little research to see if he will fit your story.

There is no better hero than William the marshal, knight errant
and friend of Eleanor of Aquitaine, Henry II of England, King Richard the Lion Heart, and even King John (I). He fits your time period. Unfortunately, he was born in ~1147 and died in 1219 which is rather remarkable longevity considering the tournaments, personal combats and battles in which he fought. William would be a terrific hero for any historical novel. Perhaps your fictional character could know him or ride with him. The years 1167 thru1186 were his tournament years. He was never defeated. 'Should be in the knight's Hall of Fame.

I'm not sure about the age range from 20-40 but all I can think of are Richards I thru III, Frederick Barbarossa, Henry IV (Holy Roman Emperor), Henry IV of England, King Edward II, and King Edwy of England (Edwy died when he was 18).

Biography: Joan of Arc was a peasant girl who believed she was under a divine mission to save France. In 1429, she persuaded Charles VII to let her lead a force to relieve Orleans. She led the French forces to a decisive victory at Orleans which allowed France to finally gain permanent advantage over the English. She was captured in 1430 by the Burgundians at Compiegne; Charles VII did not attempt to ransom her. She was burned at the stake by the English as a heretic in Rouen on May 30, 1431. She was about 19 years old. Joan was canonized 16 May 1920.

Leonidas goes back a long way, but I don't know if he fits the crusade time period, probably came before...
I don't know when Salah ed-Din died but he is probably the best known general of the crusade period.
