I live in Vegas and you can get absolutely anything to eat at the casinos. Vegas is very big on all-you-can-eat-buffets. Prime Rib Buffets are very "Vegas like".
I got this list off of food net works "Vegas Party"... (the recipes are on the website)
Jean-Philippe's Carrot Cake
The Ultimate Cheesecake
Chocolate-Covered Strawberries
Strawberry Cocktail
Hurricane
Bloody Bull
Spiced Martini
Lobster Salad on Brioche with Vanilla-Orange Vinaigrette
Chicken Stuffed with Lobster Meat
Stuffed Veal Roulade with Crabmeat
Rigatoni with Italian Eggplant
Spicy Jambalaya
Osso Buco Milanese
Roast Prime Ribs of Beef
Spicy Seared Scallop Salad
Banana Pancakes
HOWEVER, I think any food would do, make it simple and just make sure the decor is very Vegas and the cocktails are flowing!

Greek diner food...any greasy breakfast food with five pounds of whipped cream. Huge deli sandwiches to soak up the alcohol. Best Vegas drink is a "Red-headed Slut":
1 oz peach schnapps
1 oz Jagermeister® herbal liqueur
cranberry juice
Have fun.

Casinos have every type of food you can imagine. There are hog trough-buffets with every type of cuisine imaginable on there, to high end restaurants where a burger or a pizza is $1000 with caviar or kobe beef on them. Margaritas are always popular drinks. Or Cosmo's for the girls.

Buffet style is the way to theme your party... with hostesses wearing skimpy clothing and serving watered down drinks... the sounds of excitement and bells going off... oh and lots of cigarette smoke wafting on the ceiling !!!

You know what would be cool? Go with OLD SCHOOL Vegas..... like as tacky and wild as can be. I'm talking Elvis, Ann Margaret, Liberace, the Rat Pack, etc....
You could serve really old-school cocktails and snacks.....
I'm thinking now and I want to have a party like that! ;) Thanks for the inspiration!

Around my neck of the woods, casinos have buffets with food from different parts of the world (i.e. mexican, italian, chinese).
