They didn't have to be sailors. Any traveler going north or south, who pays attention to the position of the stars, will notice that the north star gets higher or lower from the horizon.
They don't even have to be able to see the north star. They just have to notice that the celestial sphere rotates around an axis, once a day. This can be done anytime they can see any of the stars for a hour or more.
The changing position of the north star is evidence that the Earth is round, or nearly round.

That Earth is spinning in a way very similar to a top or gyroscope, and it is wobbling in the same way that they wobble. This is called "precession".
