I would like to think that they dye them to cover blemishes, but I think they do it because everyone knows that they are naturally green and gross, and if someone sees them as red, they might think that they will taste better and buy them. Unfortunately they are still gross.

If they are supposed to be spicy flavored pistachioes they artificially flavor them to make them appear more spicy, since in some people's minds red=spicy.

Hmmm... perhaps to make it look more roasted? Are you sure they dye them? Sometimes when they roast them they come out that way.
It could also be to cover the original natural color which is less attractive.
