Particularly younger European women.

It's incredible, the "hottest" women where I live (California) would only be considered average in comparison to Europeans. Any of them that came here would undoubtedly be approached by a modeling agency. Ok, I'm exaggerating a bit, but that's how I saw it.

Yet I see them eating gelato, milkshakes, candy bars, and tons of pasta. But they look like supermodels. It kills me. I eat a lot of junk, too, but I'm paying for it - my body isn't overweight, but isn't as thin as I'd like. They never, ever exercise - I've never seen anyone jogging, no fitness centers.

Do Europeans just have higher metabolisms and more favorable genes than Americans?

The real answer is moderation.
The ladies you see eating might not eat anything but veggies the rest of the day.
And while you do not see the fitness centers, they do exist and are often used.

I wish I had as much control as my French friends, I am twice their weight with only a little more length to put it on.
These friends eat very nice cooked lunches and dinners, all of four bites of it.
And for the sweets, they serve their guests and husbands, and than come in with what seems an empty bowl for themselves.
But every once in a while they will treat themselves on a nice ice cream or so.

Of course there are the lucky ones, who can eat as much as they like, but there are people like that in the USA too. The difference is that most people who can not eat all, will still eat everything, and in great amounts too.

They are not. They don't eat that much and they exercise all the time. I come from a country in Europe where we hardly eat anything yet the average woman is almost 160lbs. And I often think many American women look 'european' now and I'm shocked to see videos and pictures in the US where everyone is riding their bikes!! We all use cars in my country for everything!! I am jealous how I see American women who are 130-140lbs gorging on like 4000 calories a day whereas we have to eat as little as 1000-1200 to maintain that weight. Also, in this country, a 28 inch waist is considered 'tiny' and a 40 inch waist is acceptable.

I think I agree with what someone else has already mentioned. Moderation is the key, and most Europeans rely on their own two legs more than their car. They also tend to eat a bit different than people here in the U.S. My mother is Half German Half Italian and my father is French. Growing up this is how we would eat our meals: For breakfast we'd have a sandwich (with real bread) and fruit, then we would come home for lunch. Lunch was the big meal of the day. This is the hot and heavy meal. Then for dinner we'd have something like for breakfast, but with a nice salad on the side. For snacks we usually had healthy things like raw carrots, broccoli, or things like that. The real junk food was an occasional treat for us. So, I agree with what was said before, that moderation is the key.

That's a very good question.

I'm Czech and even though if I eat a lot, I can never gain a little weight as much as I'd like to. I do know that I have high metabolism.

And I don't even have to exercise or anything. But all I want is a little more weight. I've gained a very little only by maybe 4-14 pounds over the years, but that's still not much.

First they eat less, way less than in the US.
Second they use way less car and walk a lot. I'm French living in California and I go to work walking (takes me around half an hour each way), I got stopped by the police several times asking if I needed help or if my car has broken down...
Third, when they eat pasta, even ton of it they don't put in it Alfredo sauce, parmesan cheese, bacon etc at the same time.
Fourth, for one good meal, they eat salad afterwards for three days.
Instead of going to the mall on Sundays (they are all closed anyways), they go for hikes, bike rides. A lot of people know how to ski and swim. If you have a house you mow your lawn yourself, there are no gardeners to do it for you.

Also what I noted is that the food is more satisfying there, less sugar and sodium loaded, so you don't need to eat as much as here to enjoy it.
Same thing for wine and alcohol in general, you are taught to enjoy the good things, so you drink wine and enjoy it instead of getting hammered on beer.

I hope this helps, this is just a matter on how you enjoy live, bigger is not always better.
