because 3x3x3 = 27

Jenn, just remember that a logarithm is an exponent!
For your example log5 25=2, the English translation is" 2 is the EXPONENT that 5 has to be raised to, to get 25. We write this as 5^2 =25

For log3 27=3, the English Translation is "3 is the EXPONENT that 3 needs to give 27"

I think you meant to write 5^2 instead of 52.

log_3 27 = 3 means 3^3 = 27.

In general, log_b n = k means b^k = n.
