excess helium gas being vented. Since helium is an inert gas, it is used to pressurize the fuel tanks.

The vapors are from the on board microwave that is warming up the pre-flight ham dingers and Trader Joe's turkey pot pies for the crew. The hissing is caused by the out gassing of the keg of Watney's Reg Barrel located in the main fuel tank. ts

Some of the sound is from escaping gas being vented but some of the hissing sounds you hear especially after landing is the sound that the A.P.U. makes.

because gas is escaping they do that so that when they have to ignite it it will catch fire fast and send the shuttle off to space. The vapors could be from the heat cause it heats up and liquids could evaporate

Those sounds come from the liquid-fuel tank (..that's the big, orangeish tank..) venting excess fuel.
