I starred your excellent question! Way to go!
If they quit: Undertaker... obvious reasons and I would miss Randy Orton... he's the only reason I watch Raw. Really... the only reason. That eye candy, I can't get enough of. Yeah... I'm sad and pathetic but that's how it is.
I would like it to the extreme if Khali just gave it up and Snitsky. Big guys, wastes of space.... there is no need for them.

Miss:The Undertaker because i think other wrestlers(like Orton,Kennedy e.t.c.) can replace not surely 100% others(like Stone Cold,The Rock e.t.c.)but they can.The Phenom has a very unique gimmick and they will never find a good replacement.
Want:I want Ric Flair to retire cause he's too old(58 i think).He can't wrestle for his whole life.Also Jim Duggan is too old but he's not performing frequently as Ric Flair does..

Edge or Orton I'd miss. If they go to TNA, I wouldn't miss them, I'd be proud for making the choice to stay on my TV.

I would hate to see Randy Orton quit, because he has such a great future ahead of him. I'd love to see John Cena quit because I'm just sick of him.
