Pretty much any recognized charity (510 (c) (3) organization does not pay taxes. Although you do need to define what you mean by not paying "taxes". They don't pay income taxes, but some churches do end up having to pay property taxes, depending on the state they are in. Even non-profits have to pay payroll taxes on their employees.
