I'll include my favourite films from each director as well...

1. Steven Spielberg - Saving Private Ryan
2. Roman Polanski - The Pianist
3. Quentin Tarantino - Pulp Fiction
4. James Cameron - True Lies
5. Clint Eastwood - Unforgiven

I like Ridley Scott, but his films tend to meander at times, likewise for Scorsese.
Kubrick has some inspiration moments but I've never gotten used to his art-house approach.

Definitely not James Cameron -- that guy is a hack.

In no particular order:
1. Martin Scorsese
2. Oliver Stone
3. Stanley Kubrick
4. Steven Speilberg
5. George Lucas

My personal favorites are the Coen Brothers.

Kubrick
Scorsese
Eastwood
Lucas (for the first Star Wars)
Scott

Cannot stand Stone!

Of my own tastes I would add
Peter Weir
David Cronenberg
Coen Brothers
Judd Apatow (his movies may not be important works of art, but everything he touches is comedic gold)
