I just learned that dinosaurs were not exactly reptiles; at least, they weren't the equivalent of lizards and snakes.

Being reptiles they probably did, however not in the sense that you are probably thinking. They were probably not sheders in the way that snakes shed, but in being reptiles is was more like the way other lizards do... chunk here and there.

The main reason being the texture of their skin. Snakes have the ability to shed all at once because of how smooth they are, it allows it all to come off at once. Most dinos on the other hand and great texture to the skin and many were plated. Due to that reason the skin would not of had the chance to come off all at once.

Yes, all animals shed. Some, such as reptiles shed all there skin at once. But, mammals and birds shed dead skin cells individually. It is likely that dinosaurs like reptiles shed all there skin at once.
