Ratatouille is a dish from southern France and features vegetables of the region: tomatoes, eggplant, zucchini, bell peppers, onions garlic, olive oil...yum! It is sort of like a vegetable stew. It is very delicious and summery as you can eat it warm or cold.

Its really nice, served with crusty bread or as a side-dish. Can be served over pasta also. A very versatile recipe that can be used to accompany grilled meats or topped over baked potatoes. This is how i make it: 1/2 cup olive oil 2 cloves garlic 2 medium eggplants salt 4 zucchini, sliced 2 onions, finely chopped 1 green capsicum, sliced 1 red capsicum, sliced pepper 1 can peeled tomatoes 1 teaspoon sugar Cut eggplants in halves lengthwise, cut the surface about 1 cm deep in a criss-cross pattern and sprinkle with salt. Turn cut side down and let drain for 1/2 hour. Wipe the eggplants and then cut into cubes. Heat the oil and cook the onion and garlic until soft. Add the eggplant and cook for another 2 minutes. Add capsicums, zucchini, peeled tomatoes, sugar, salt and pepper to taste. Cover and simmer gently for about 20 minutes. Serve warm and sprinkle with a little parmesan if liked. Enjoy.

There are tons of approaches to ratatouille--try searching the word on food.com or allrecipes.com for several examples. It's basically just cubed, sauteed vegetables, (usually including eggplant, onions, squashes, and tomatoes) served in a thick, savory sauce or broth. What you want to do is figure out what flavors you want to emphasize (by choosing ingredients and spices) and how you want to present the dish (in an omelet or crepe, over rice, etc.). Do some experimenting before you settle on one version to serve your nephew, and ask for lots of opinions; if you've never had it before, you're going to have to focus on creating something people enjoy rather than being accurate or authentic in your recipe. You have to LOVE eggplant, mushrooms and zucchini to enjoy ratatouille. The dish has a tomato base sause flavored with onions and garlic.

No. It's mostly vegetables. It tastes pretty good. My mom has made it. She's a chef. I don't know the recipe but i would go to www.foodnetwork.com that's ur best bet. It's a warm dish too.
