it actually turns from blue to red then brown and its because of oxygen

Because it has been exposed to the oxygen. Blood is blue until it hits the air, and then it turns red and gets progresively darker as it stays out in the open and dries.

Possibly because it has been exposed to air, and this causes some kind of breakdown in the cells, but I really don't know.

(seriously -- well, kind of. blood contains iron. when exposed to oxygen the iron oxidizes, which is essentially the same process that causes metals containing iron to rust)
